Rock sugar, also known as rock candy or sugar candy, is a hard confection made by cooling sugar syrup into large crystals, sometimes around a stick or piece of string. It can be made with different types of sugar, including white granulated sugar, sugar cane, and brown sugar. Today, rock sugar is produced in the form of irregular lumps and in smoother, more uniform chunks, and it ranges in color from pale gold to white. Brown rock sugar is particularly prized for its caramel-like flavor and ability to create a glossy glaze. It’s ideal for dishes like Shanghai Smoked Fish and adds a delicious sweetness to Nian Gao, the traditional sweet rice cake enjoyed during Chinese New Year.
